Around 75 minutes by air from Tokyo to Yonago Kitaro Airport followed by a 20-minute drive, or roughly 3 hours by limited express train from Osaka, Yado Shiontei in Kaike Onsen on the Yonago coast of western Tottori is a destination ryokan defined as much by its cuisine as its setting. Overlooking the Sea of Japan, this rare seaside hot-spring town is known for pristine seafood and the mineral-rich vegetables grown around Mt. Daisen, and at Shiontei, executive chef Masahiko Oishi builds a deeply regional kaiseki experience around both land and sea, using organic produce from local farms, seasonal fruit and freshly landed fish, served in private dining rooms or at a kappo-style counter where the rhythm of preparation becomes part of the meal. In winter, the focus turns to Matsuba crab from nearby Sakaiminato, presented across a refined progression that reflects the area’s seafood culture. The ryokan itself remains intentionally understated, with just ten spacious suites, each with a private open-air or semi-open-air bath, offering a quiet, residential backdrop to what is, at its core, a compelling culinary journey.
